Of course you are probably thinking pasta all the way but for vegans that is kind of tough because fresh pasta in Italy is made with egg. The dried pasta is not for the most part it is made with just semolina, so you can stick to that. Always opt for fresh breads and they have tons and tons of produce especially olives. The Mediterranean diet, since they are so close to that, they do a lot of olive oil, a lot of fresh vegetables, like I said olives and produce. Add extra virgin olive oil into a large saucepan and then cook together the onion, garlic, celery and carrot for about 5 minutes on a medium heat 2. When the onion and garlic begins to brown add the eggplant, zucchini and capsicum. 3. Cover the saucepan with a lid and the it cook for about 15minutes. Stir occasionally. 4. After 15minutes add half glass of water into the saucepan and a pinch of sea salt 5. Place the saucepan with the vegetables on the stove at a medium-high heat for approx. 20 minutes 6. Remember to keep an eye on the vegetables and stir it around every 5 minutes. When the vegetables became soft, add the finely chopped tomatoes, basil and an extra pinch of sea salt. 7. Now cook the sauce for about 20 minutes. 8. Get a large pot and fill it with 5 litres of water. Put this on the stove at a high temperature until it boils in preparation for the pasta. 9. By now, your pot filled with water should be boiling. Add a palm full of sea salt to the water and stir. Then check the cooking time on your packet of pasta, pour the pasta in, and set your timer. Be careful not to ignore the time noted on the packet or you might over or under cook the rigatoni. 10. Now back to your pasta sauce! 11. Once the pasta is cooked, strain it and then add it to your saucepan with tomato sauce. 12. Mix it and then transfer it into the large pot where you boiled the pasta. Make sure there is no water in it ;-) 13. It’s easier to mix it well in the large pot. You basically want the tomato sauce to go into each rigatoni pasta. HOW TO SERVE: 1. Once the pasta is full of colour and the ingredients have started to stick to the rigatoni, it is ready! 2. Get a large serving spoon and use this to serve the pasta onto a plate trying to keep it in the centre. 3. Then, sprinkle some pecorino on top of the pasta and serve nice and hot! Add approx. 5litres of water to your pot and put it on the stove at a medium-high temperature. 2. Fill up your kettle and boil it. 3. Put 20g of porcini mushrooms into a bowl and pour some water from your freshly boiled kettle over the top of them. This should more or less cover them but do not drown them by filling your bowl to the top! Leave these aside for at least ten minutes. 4. Now get your ricotta and put it into the other serving bowl. Pour a small amount of the boiled water from the kettle into the ricotta (careful not to add too much!) and mix your ricotta with a table spoon. 5. Mix the ricotta until it begins to turn into a creamy mixture. Pour another small amount of water over the top and mix once again. 6. Once you have created a "ricotta cream", you can put this to the side. 7. Now, get your mushrooms and cut them in half, and in half again, making sure you don't cut them too small. 8. Zucchini is next! Trim off the top and the bottom and then slice it into small pieces, but not too thin. Take your time and enjoy this preparation, remembering, you are not a chef, you are just a cook who loves food...! 9. The zucchini should then be transferred into a flat saucepan. Add some water to the zucchini, making sure you just cover them. 10. Place the saucepan with the zucchini on to another part of the stove which should be at a high temperature. Sprinkle some table salt on top and let this simmer for around 20 minutes. 11. Following this, remove the zucchini from the stove, strain them so there is no excess water and put them back into the same saucepan 12. Now, lower the heat and add 3 tablespoons of extra virgin olive oil, chopped onion and stir for around two minutes. 13. You can now grab the mushrooms that you chopped up earlier and add them to the mix, once again stirring it a few times. Cover the saucepan with the lid and let this cook for another 2 minutes, letting all the ingredients get to know one another and keeping the smell inside. 14. Following this, remove the lid and pour a little less than ½ glass of white wine, stir it a few times and cover it once again, leaving it this time, for five minutes. 15. Then, remove the lid and add the porcini mushrooms which you prepared earlier, including all of the water (which will help because it is FULL of flavour!) 16. Let this cook at a low-medium temperature for 15 minutes with the lid on checking on and stirring it, every few minutes. 17. Your large pot of water should be boiling by now and it is time to add to nice pinches of rock salt. 18. Now, pour your good quality orecchiette pasta into the water and read the cooking time on the packet of instructions carefully as this can vary. 19. You can remove the lid from the pasta sauce mixture after about 7 minutes as there is not long left before the pasta will be ready. Add parsley to the mix, (keeping a small amount to the side for later) and stir. 20. When there is just 2 minutes left before your pasta is ready, pour all of the ricotta cream which you prepared earlier, to the pasta sauce mixture. 21. Your pasta should now be ready. Strain it and then transfer it to your pasta sauce and mix everything together once again so that the pasta becomes filled with all the colours of your sauce and the yummy flavours. 22. If you are good at flipping the pasta in the pan, this can help with the mixing, but if not, don't worry, the wooden spoon works just as well! UTENSILS: 1 x large saucepan 1 x 5L deep pot METHOD: 1. First, get the eggplant. Rest it on a chopping board and cut it in half. Then, cut it in half again, and again. Each slice should then be cut into strips and then even smaller, into cubes. PHOTO -- PHOT -- PHOTO - PHOTO 2. Place all of the eggplant cubes into a saucepan 3. Now, onto your zucchini! Chop off the top and then the bottom, then slice it down the middle. Slice each half again, then again and also into small cubes and place them into the saucepan with your eggplant. 4. Now, prepare your olives by chopping them in half, and again, and into cubes. Put them to the side for later on. PHOTO OF ZUCCHINI AND OLIVES 5. Add some water into the saucepan, careful not to fill it too much, but spread it enough to cover your ingredients without drowning them. 6. Place the saucepan with the vegetables on the stove at a medium-high heat for approx. 20 minutes 7. Remember to keep an eye on the vegetables and stir it around every 5 minutes. After 20 minutes, add 3 table spoons of table salt and stir it in. 8. Your eggplant and zucchini should now be cooked. Remove this saucepan from the stove and carefully pour all of the mixture into a strainer over the sink. The vegetables should be placed back into the same saucepan and back onto the stove. Add the finely chopped onions and a drizzle of extra virgin olive oil. 9. Once the onion begins to brown, add some white wine. 10. Now, time to add my favourite herb, fresh Italian basil! 11. The smell that fills your kitchen will be irresistible! 12. Get the olives that you put to the side earlier, add them to your mixture and stir everything together for at least one minute. 13. Now, grab a large pot and fill it with 5 litres of water. Put this on the stove at a high temperature until it boils in preparation for the pasta. 14. By now, your pot filled with water should be boiling. Add a palm full of sea salt to the water and stir. Then check the cooking time on your packet of pasta, pour the pasta in, and set your timer. Be careful not to ignore the time noted on the packet or you might over or under cook the rigatoni. 15. Now back to your pasta sauce! The last ingredient for this mixture is pesto. Pour all the pesto from the jar into the mixture using a tablespoon if you need to. 16. Leave a small amount inside the jar and pour some water into it. Stir this inside the jar and add to the saucepan. 17. Let this simmer on a low heat until your pasta is ready. 18. Once the pasta is cooked, strain it and then add it to your pesto mix and stir carefully and slowly. HOW TO SERVE: 1. Once the pasta is full of colour and the ingredients have started to stick to the rigatoni, it is ready! 2. Get a large serving spoon and use this to serve the pasta onto a plate trying to keep it in the centre. 3. Then, sprinkle some parmesan on top of the pasta and serve nice and hot! Preparation Time: 10 minutes Cooking Time: 8 minutes Baking Time: 10 to 15 minutes. Baking Temperature: 200°C (400°F) Makes 3 servings Ingredients 1 1/2 cups boiled long grained rice (basmati) 2 tbsp butter 1/4 cup finely chopped onions 1/2 cup finely chopped coloured capsicum 1 1/4 cups milk 3 tbsp fresh cream 3/4 cup grated processed cheese salt and freshly ground black pepper powder to tatse Method 1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes or till they turn translucent. 2. Add the capsicum and sauté on a medium flame for 1 to 2 minutes or till the capsicum becomes soft. 3. Add the rice, milk, cream, salt, pepper and ¼ cup of cheese, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally using a potato masher. 4. Pour the mixture in a baking dish and spread it evenly using a spoon and sprinkle the remaining 1/2 cup of cheese on top. 5. Bake in a pre-heated oven at 200°c (400°f) for 10 to 15 minutes. 6. Serve immediately.
