Add extra virgin olive oil into a large saucepan and then cook together the onion, garlic, celery and carrot for about 5 minutes on a medium heat 2. When the onion and garlic begins to brown add the eggplant, zucchini and capsicum. 3. Cover the saucepan with a lid and the it cook for about 15minutes. Stir occasionally. 4. After 15minutes add half glass of water into the saucepan and a pinch of sea salt 5. Place the saucepan with the vegetables on the stove at a medium-high heat for approx. 20 minutes 6. Remember to keep an eye on the vegetables and stir it around every 5 minutes. When the vegetables became soft, add the finely chopped tomatoes, basil and an extra pinch of sea salt. 7. Now cook the sauce for about 20 minutes. 8. Get a large pot and fill it with 5 litres of water. Put this on the stove at a high temperature until it boils in preparation for the pasta. 9. By now, your pot filled with water should be boiling. Add a palm full of sea salt to the water and stir. Then check the cooking time on your packet of pasta, pour the pasta in, and set your timer. Be careful not to ignore the time noted on the packet or you might over or under cook the rigatoni. 10. Now back to your pasta sauce! 11. Once the pasta is cooked, strain it and then add it to your saucepan with tomato sauce. 12. Mix it and then transfer it into the large pot where you boiled the pasta. Make sure there is no water in it ;-) 13. It’s easier to mix it well in the large pot. You basically want the tomato sauce to go into each rigatoni pasta. HOW TO SERVE: 1. Once the pasta is full of colour and the ingredients have started to stick to the rigatoni, it is ready! 2. Get a large serving spoon and use this to serve the pasta onto a plate trying to keep it in the centre. 3. Then, sprinkle some pecorino on top of the pasta and serve nice and hot! Slice eggplant as shown in video. Dip slices in the flour and shake off any excess flour, then dip in egg wash, then dip into seasoned breadcrumbs mixture. Place olive oil in pan and let get hot for frying. Also preheat your oven to 375 degrees. To test your oil drop a pinch of bread crumbs in the oil and if it sizzles your oil is now hot enough for frying. Fry two to three of your battered eggplant slices at a time being sure to flip over so that both sides cook until a golden brown color. Remove and place on napkins to drain any excess oil. Continue until you have cooked all the eggplant. Take a baking dish and spray with non-stick spray. Next begin to assemble the eggplant. Starting with one slice, then top with a spoonful of spaghetti sauce ,then sprinkle on some shredded mozzarella cheese, then diced tomatoes and fresh chopped basil, then add another layer of eggplant and do the same. Each eggplant serving should be stacked with no more than 3 slices of eggplant and toppings. (See video) Once you are at the last topping add everything but also add some fresh shredded Parmesan cheese. Once complete, place in preheated oven and let bake for 10 minutes. Travel Tip: Finding Vegetarian Food in Italy - as part of the expert series by GeoBeats. Some of my tips for finding vegetarian food in Italy is pretty easy. Of course you are probably thinking pasta all the way but for vegans that is kind of tough because fresh pasta in Italy is made with egg. The dried pasta is not for the most part it is made with just semolina, so you can stick to that. Always opt for fresh breads and they have tons and tons of produce especially olives. The Mediterranean diet, since they are so close to that, they do a lot of olive oil, a lot of fresh vegetables, like I said olives and produce. So always stick to that, and produce stands, farmer markets. And when you are at a restaurant it is easy to vegetarianize pretty much anything, with their fresh marinara sauces, stay away from the cream sauces if you are a vegan. Always ask your server ahead of time and plan before you go.

Add approx. 5litres of water to your pot and put it on the stove at a medium-high temperature. 2. Fill up your kettle and boil it. 3. Put 20g of porcini mushrooms into a bowl and pour some water from your freshly boiled kettle over the top of them. This should more or less cover them but do not drown them by filling your bowl to the top! Leave these aside for at least ten minutes. 4. Now get your ricotta and put it into the other serving bowl. Pour a small amount of the boiled water from the kettle into the ricotta (careful not to add too much!) and mix your ricotta with a table spoon. 5. Mix the ricotta until it begins to turn into a creamy mixture. Pour another small amount of water over the top and mix once again. 6. Once you have created a "ricotta cream", you can put this to the side. 7. Now, get your mushrooms and cut them in half, and in half again, making sure you don't cut them too small. 8. Zucchini is next! Trim off the top and the bottom and then slice it into small pieces, but not too thin. Take your time and enjoy this preparation, remembering, you are not a chef, you are just a cook who loves food...! 9. The zucchini should then be transferred into a flat saucepan. Add some water to the zucchini, making sure you just cover them. 10. Place the saucepan with the zucchini on to another part of the stove which should be at a high temperature. Sprinkle some table salt on top and let this simmer for around 20 minutes. 11. Following this, remove the zucchini from the stove, strain them so there is no excess water and put them back into the same saucepan 12. Now, lower the heat and add 3 tablespoons of extra virgin olive oil, chopped onion and stir for around two minutes. 13. You can now grab the mushrooms that you chopped up earlier and add them to the mix, once again stirring it a few times. Cover the saucepan with the lid and let this cook for another 2 minutes, letting all the ingredients get to know one another and keeping the smell inside. 14. Following this, remove the lid and pour a little less than ½ glass of white wine, stir it a few times and cover it once again, leaving it this time, for five minutes. 15. Then, remove the lid and add the porcini mushrooms which you prepared earlier, including all of the water (which will help because it is FULL of flavour!) 16. Let this cook at a low-medium temperature for 15 minutes with the lid on checking on and stirring it, every few minutes. 17. Your large pot of water should be boiling by now and it is time to add to nice pinches of rock salt. 18. Now, pour your good quality orecchiette pasta into the water and read the cooking time on the packet of instructions carefully as this can vary. 19. You can remove the lid from the pasta sauce mixture after about 7 minutes as there is not long left before the pasta will be ready. Add parsley to the mix, (keeping a small amount to the side for later) and stir. 20. When there is just 2 minutes left before your pasta is ready, pour all of the ricotta cream which you prepared earlier, to the pasta sauce mixture. 21. Your pasta should now be ready. Strain it and then transfer it to your pasta sauce and mix everything together once again so that the pasta becomes filled with all the colours of your sauce and the yummy flavours. 22. If you are good at flipping the pasta in the pan, this can help with the mixing, but if not, don't worry, the wooden spoon works just as well! Calzone is an italian filled oven bread. A typical calzone is baked in oven and stuff with salami, or ham, mozzarella, ricotta and parmesan cheese. Ingredients for the dough: - 1 and ½ tbsp dry yeast - 1tbsp sugar - ½ cup lukewarm water - 3 cups plain flour - salt to taste - 2tbsp olive oil Ingredients for stuffing: - 2-3 garlic cloves chopped - 2 onions chopped - 1 green bell peppers - 2 tomatoes chopped - 1tbsp olive oil - salt to taste - 1tbsp chili flakes - 2tbsp tomato ketchup - 1tbsp basil - 1 cup mozzarella cheese - 1 egg beaten Method: - to make a dough, mix the yeast, sugar, and lukewarm water together and keep it to rest until the yeast active. - in a bowl, mix flour and yeast mixture. Knead to a soft dough. - add olive oil and knead until have a nice soft dough. - cover it and keep it in a warm place until double in size - for stuffing, heat olive oil and add the garlic and onion sauté - add bell peppers and sauté it too until slightly soft - add tomatoes, salt to taste, chili flakes, and basil an mix well - add tomato ketchup mix well - turn of heat and let it cool - divide the dough into medium size balls and roll out into circles about 6-7 inch. - spoon in some of the mixture on one half of he circle - sprinkle some cheese on top - help of fork, seal the edges - brush with beaten egg (optional) - bake in a preheated oven at 200c for 10 to 15 minutes until golden brown serve hot!
